Summer 2011

It's hard to say what happened to the summer of 2011, or at least to the detailed records of each Cornbread Supper. One thing that happened was that your note taker became preoccupied with a forthcoming book.

Then there was a certain vacation. Cornbread Supper took place without a note taker by the wonderful graces of Cornbread Angels. People ate in a graveyard, romped on a goat farm, returned to the graveyard, injured no pictures. No food lists.

So now we do what we do in these situations. What we do now is make one giant post with one giant list and good pictures. It's all Cornbread Suppers, and it's all good.

We can say for sure that these foods were at the September 19 Supper:

  • Polenta: Tomato, basil, cheese, eggs, etc.
  • Jalapeño Cornbread: Local flour, jalapeños
  • Local roasted beets, potatoes, mushrooms, garlic, rosemary, Oliva Bella Oil
  • Black Bean and Corn Salsa w/Roasted Chiles (mild)
  • Pastry with Pepper Jack Cheese (and apple slices)
  • Beets, fennel, and apple, and pomegranate w/curry ginger dressing
  • Potato Soup
  • Seafood Paella
  • Porky Bits Savory Cornbread, no gluten
  • Hot (Adobo chiles) Porky Bits Savory Cornbread, no gluten
  • Sweet Honey Buttermilk Muffins; vegetarian, contains gluten
  • Chocolate Almond Tapioca Pudding; gluten free, contains eggs, dairy, cocoa

And that these were on the table sometime earlier in the summer:

  • Summer pasta, basil, tomatoes, olive oil, feta
  • Local corn
  • Watermelon and tomato, feta, balsamic, mint, dill and basil
  • Local beans, tomatoes, basil, Oliva Bella oil, salt and pepper
  • Local corn-some spice, some lime, some cilantro
  • " Redneck Caviar": garden tomatoes, tomatilloes, cilantro, Iowa corn, Kroger beans
  • Tomato pie
  • (Northern) corn muffins with bacon, corn, onions; contain blauer and sugar
  • (Northern) vegetarian corn muffins; contain flour and sugar
  • Pulled pork with "medium" sauce and buns
  • Watermelon gazpacho
  • Veggie rice
  • Local okra curry
  • Veggies with Pesto (may have hot peppers)
  • Spaghetti with Pesto
  • Non vegetarian beans
  • Parmesan
  • Cabbage salad with spiced garbanzos
  • Local beans, tomatoes, basil, oil from Oliva Bella, various vinegar, salt, pepper
  • Fresh corn pudding, vegetarian, gluten free
  • Pickled Grapes
  • Unfettered tomatoes
  • Cornbread
  • Sugar cookies
  • Apple crumble, very local (neighborhood apple tree)

Boone Tavern Spoon Bread, the 1950s recipe

We have tried spoonbreads (soft, luscious, buttery—described by James Beard as a "heavy, dense soufflé") as Cornbread Supper mainstays before, and used great recipes, but the spoonbreads always did what spoonbreads (and soufflés) do: deflate. Through serendipity, and thanks to a Cornbread Supperian, I lucked into the old Boone Tavern (Berea College) recipe for spoonbread, and it is far less droopy. Perhaps Boone Tavern developed an approach to spoonbread that preserves all its goodness while still working for a busy restaurant. In any case, with thanks to Kentucky food and foodways author and guru John van Willigen, here's an excellent recipe for that can be doubled, tripled, and quadrupled to feed spoonbread to a crowd. We remember Vicky Schankula, 1947–2016

Vicky Schankula, at right, in purple One of life's most gracious and delightful people, Victoria Fairbanks Schankula, found Cornbread Suppers early on, and took joy in the weekly gatherings. She came to Cornbread Supper faithfully, bringing beautiful food, laughter, a camera for her "picture of the day," a lovely British accent, a commitment to helping clean up, and a constant interest in each other person in the room. When Vicky entered the house on Monday nights carrying a particular large round plate, children (and a few adults) trailed her to the dessert table to see what she had brought. The favorites: lemon bars, brownies and her mother's most unusual, delicious carrot cake. Vicky graciously shared and allowed us to publish recipes for Lemon Bars and Isabel Fairbairns's (Gangy's) Carrot Cake on this site. Cornbread Supper now is resting

 For all the Cornbreadians and would-be Cornbreadians -- it was a good run. A bit more than nine years.  You came on Mondays. Conviviality ensued. You made community. Gratitude to all. It was a gift to us.
