November swept through Cornbread Supper with an amazing set of warm Mondays. Or perhaps not so amazing, given how fast our planet is warming. Part of the reason for Cornbread Supper's being is to connect and encourage, to build on our natural sense of community and our interest in belonging to each other, to our place. So even in the face of global warming, which feels a lot more pleasant in November than in August, we gather on Monday nights for conviviality, conversation, food, drink, and friendship. November's meals merged together in the pile waiting for entry, so we'll merge November 17, 21, and 28 here as well. On a delightful just warm-enough night, after storms and rain, people sat on the front porch in droves, and kids played in the street and around the house, running, running. The food was so fall-like, rich and savory and still lightened by many fresh vegetables and fruits. Apple cabbage slaw with Asian dressing Local beans, tomatoes, basil. Oil from Oliva Bella. Various salt, pepper, vinegar. Chili w/beef Baba Ghanoush—London Ferrell Eggplant Beet Salad Pretzel Bites. Herb Greek Yogurt Dip Smashed potatoes w/basil pesto Honey Cornmeal Rounds Fall veggie bake: Spaghetti squash, roast tomatoes, onions, garlic, sweet peppers. Vegetarian. One food ID slip, discovered outside, along with some stuffed animals and other evidence of children at play, reads: choclltt Mellc!! 10002 ¢!!!

Summer 2011

It's hard to say what happened to the summer of 2011, or at least to the detailed records of each Cornbread Supper. One thing that happened was that your note taker became preoccupied with a forthcoming book. Then there was a certain vacation. Cornbread Supper took place without a note taker by the wonderful graces of Cornbread Angels. People ate in a graveyard, romped on a goat farm, returned to the graveyard, injured no pictures. No food lists. So now we do what we do in these situations. What we do now is make one giant post with one giant list and good pictures. It's all Cornbread Suppers, and it's all good. Recipe: Zucchini-Avocado Salsa

Tatsiana McGee brought a beautiful soft green-and-yellow dish to Cornbread Supper on Monday, September 12, 2011, and it caused a mild Cornbread Sensation. Tatsiana graciously shares the recipe here. She says: I promised to share the recipe for Zucchini-Avocado Salsa. It's from the book "The Vegetarian Mother's Cookbook" by Cathe Olson. "This is a delicious alternative to regular salsa. It is great with chips or as a topping for burritos, tacos, or quesadillas. 2 small zucchini, diced (about 2 cups) 1 cup fresh or frozen corn kernels 3 green onions, thinly sliced 2 medium avocados, peeled, pitted, and diced 2 tablespoons fresh lime juice (about 1 lime) 1/4 olive oil 1 clove garlic, crushed 3 tablespoons minced fresh cilantro Dash Tabasco sauce Sea salt and black pepper to taste Steam zucchini and corn together for 2 or 3 minutes until colors are bright. Help Our Neighbors in Central Alabama

Tonight as people left another wonderful Cornbread Supper, lightning flashed and the storm siren sounded. We keep in mind the many people in nearby states who have suffered unbearable losses when conditions like these have grown into monstrous storms and tornadoes. I checked my email after people had left, and found this message from friend Ann Beard Grundy, who grew up in Birmingham, Alabama: Do you think you could ask your network to consider helping out the storm victims in Central Alabama? My sister is an administrator at JCCEO, a major social service agency, and they are bombarded with the most basic of requests. We are speaking here of burial clothes, as families completely lost everything. Cornbread Supper May 2, 2011

Cornbread is hot, and Cornbread Suppers seem to grow hotter as the weather warms up. Lots of people come, lots of young people circle in and about the grownups, creating a two-tier party that is deeply satisfying. Bill Roche's Cornbread

Sharon Schilling brought this tender, lightly sweet, oniony cornbread to her second Cornbread Supper in May, 2011. We immediately begged for the recipe and for information about its origin. Sharon replied that Bill Roche is a special person in her life, who "just tinkered around with my Mom's cornbread recipe, adding the yogurt one day bec we were out of buttermilk (now we only use yogurt), adding the onions bec he likes them, using local Wisenberger Mills products bec they are good.  I believe, we were on a motorcycle trip when we picked up the iron, 8-wedge skillet. I like the way it toasts all the sides. We usually serve with apple/rhubarb sauce (6 apples (at least 3 Granny Smiths) nuked until applesauce, 6-8 stalks rhubarb and 1/2 c sugar cooked on the stove until tender.)" April 25, 2011: Noisy for Radio

In honor of the venerable audio medium, radio, we'll forego our usual picture this week. For that reason, and also the fact that your documentarian got a bit caught up in getting Cornbread Supper underway while also talking with acclaimed radio journalist Stu Johnson of NPR affiliate radio station WEKU in Richmond, Kentucky. (Tr: I forgot to take photos.) Stu came by to talk about food, local food, gardening, food blogging, and really we don't know what all, because he talked with several volunteer Cornbreadians and the conversations could have taken any kinds of turns -- all good ones, we're confident. We enjoyed the hubbub of a good crowd, plenty of kids, and beautiful food, including ever more green and fresh offerings as the season unfolds. Your documentarian forgot to shoot photos until all the people were gone and all the food cleared away, but the flowers, from the Campsie garden, remained fresh and crisp. On a dark, stormy night, with a tornado watch in effect, and with lots of families on spring break, intrepid Cornbreadians kept right on going, bringing food and drink, eating and drinking and talking, and playing with the two children who graced our meal this week. Daffodils rescued during a light snow fall yellowed up the Cornbread Supper room on March 28 -- on a chilly clear evening when a bit more snow was forecast. A Cornbread Quartet, Sparkling WIne, and Many Salads Welcome Spring 2011

For the first Cornbread Supper of spring, 2011 -- and probably it was our second anniversary doing Cornbread Suppers, though we thought of this a bit late -- we opened with the official Cornbread Supper bubbly, J. Roget Extra Dry, and kept rolling right through some fabulous salads and savory dishes, all supported by a quartet of Cornbreads. We had Traditional Kentucky Black Skillet cornbread in the REAL traditional format (pork drippings) as well as vegetarian. We also had peppery cornbreads, laced with 2010 jalapeños from the Campsie garden (and freezer), in both porky and veggie variations. And... Chleb (Czech Peasant Bread) Veg Medley: Potatoes, Asparagus, Bellpep, Onion, Garlic, Rosemary, Thyme Vegetarian Curry (Tofu) Basmati Rice Kalamata Gorgonzola Spread (Garlic, olive oil, pecans) Roasted Beet Salad w/Cocoa Vinaigrette: Goat cheese, cocoa, cocoa nibs, oranges; some lettuces are from Berea College

Shredded Brussels Sprouts Salad

Wonderful cook Eric Huffer brought this to Cornbread Supper, and when another Cornbreadian requested the recipe, he kindly shared. This recipe is from the cookbook  Power Foods 1 tablespoon whole-grain mustard 3 tablespoons fresh lemon juice(from 1-2 lemons) coarse salt 1 tablespoon plus 1 teaspoon pure maple syrup 2 tablespoons sunflower oil 8 oz brussels sprouts, very thinly sliced 4-6 leaves Swiss chard or kale, or a combination, stemmed and thinly sliced (I couldn't find either the last time I made this and substituted beet greens and collard greens) 1/3 cup raw hulled sunflower seeds, toasted Stir together mustard, lemon juice, 3/4 teaspoon sat, and the salt: whisk in oil until emulsified. In a salad bowl, toss together brussels sprouts and greens.  Add sunflower seds and dressing: toss to coat.  Serve immediately.

Eric Huffer's Green Olive Goat Cheese Spread

Cornbreadian and super-cook Eric Huffer brings unfailingly delicious dishes to Cornbread Supper. This dip mesmerized quite a few people on the night of its debut, and Eric was kind enough to share the recipe. approx. 3 cups Sicilian Herb Green Olives, with their olive oil (we found ours at Liquor Barn) 10 oz. A big crowd, and no pie, on Pi Day -- March 14, 2011

We promised -- and delivered -- daffodils for the tables for this Cornbread Supper, but to be present, the hungry crowd still had to brave  raw cold rain. So we lit some candles after all, in spite of the extra evening light we have gained thanks to yesterday's switch to Daylight Savings Time. A huge, beautiful salad from Berea College Farm , served with Balsamic Vinegar, caught the photographer's eye (and taste buds). Paige Prewitt's Kale Chips

Regular Cornbreadian (and also designated Cornbread Supper Angel) Paige Prewitt brought Kale Chips to Supper twice in a row, causing the Cornbread Establishment to beg--beg abjectly, ladies and gentlemen--for the cooking instructions. Paige being Paige, we had a good idea there was no standard recipe involved, because Paige's wonderful food derives from her good cooking sense, applied to what she has on hand. So, a request for a Kale Chips Guide meant that Paige would have to write down what she does by instinct. And -- she did!! Here's the secret for these amazing vegetables-masquerading-as-snack-food. Thank you, Paige! Kale Chips 1 bunch of Kale - flat or curly 1 T olive oil (don't overdo the oil) 1 t kosher or sea salt (don't overdo the salt either) Cut the stem out of the middle of all the leaves. A rare Cornbread Supper this week: No newcomers! Two tiers of experienced Cornbreadians enjoyed themselves. The first tier, the under 5-feet/under-12-years-old crew of adorable and adored young ones, ran happily around, under, and through the second tier of us older, taller people. Quite a few people took part in a video project about ice cream that's the responsibility of a relatively new Cornbreadian. Although we have crocuses blooming -- at last -- it was not exactly balmy for the 2011 Presidents' Day edition of Cornbread Suppers. Even so, we cleaned the winter dust off the porch table and chairs, and lit the outside candle. Sure enough, out of the large crowd of Cornbreadians who came to Supper, quite a few made their way onto the porch for play and fresh air February dining. Monday holidays bring people to Cornbread Supper who have regular obligations on other Mondays. The mix keeps mixing, and is fine and invigorating. So that answers that question: Will people come to Cornbread Supper on Valentine's Day? Yes, they will, and they did, and they brought Kale Crisps that drew rave reviews, along with other good things, some listed below. We found two tiny sprigs of fresh Wayne County mint in the Campsie garden, and it went into a salad a Cornbreadian brought. Small cameras in the hands of an amateur documentarian cannot quite capture the magical snow that fell all this Monday, February 7, 2011. One friend posted on Facebook: "The snow flakes are coming down holding hands." Remarkable, beautiful day, capped -- or crusted?? -- with a fine Cornbread Supper. We lucky people now have access to Elmwood Stock Farm's brand new product, organic white cornmeal that they mill themselves, to just the right consistency. That's one result, above, also made with Elmwood's amazing organic, pastured eggs, and local buttermilk.
